How to sharpen a Damascus knife on whetstones

You do not sharpen Damascus differently than any other knife — you sharpen the core steel, because the edge lives in the core. The pattern is only along the flats and cladding.

The progression

  1. 01Soak or splash your stones as the maker specifies, and set them on a non-slip base.
  2. 02Start at 400–1000 grit only if the edge is damaged; a maintained blade starts at 1000.
  3. 03Hold your angle and push the edge into the stone with light, even pressure, alternating sides every few passes.
  4. 04Work until you can feel a continuous burr on the back side along the entire edge.
  5. 05Move to 3000–6000 grit to refine, using half the pressure. Stop at 3000 for a toothy kitchen edge, go to 6000+ for push-cutting.
  6. 06Deburr with 3–5 feather-light alternating passes, then strop on leather or the edge of a cutting board.
  7. 07Test on paper: a sharp blade slices printer paper cleanly with no snagging and no push.

Protect the pattern while you work

Keep the stone flat and stay on the bevel. Dragging the flats across a coarse stone scratches through the etch and leaves a bright band the pattern never fully recovers from.

How often

  • Daily kitchen use: strop or hone weekly, full stone session every 4–8 weeks
  • Home cooking a few times a week: stones every 2–3 months
  • EDC folder: touch up at 1000/3000 when it stops biting paper
  • Never a pull-through carbide sharpener — it tears steel out of the edge

If a blade will not take an edge no matter what you do, the problem is usually heat treat, not technique. That is the point of knowing your core steel and hardness before you buy.
